Mashed potato crust broccoli Quiche


Mashed potato crust Broccoli quiche

Ingredients:
2 large potatoes
2 cups broccoli
1/4 cup milk
1 tablespoon olive oil
1/2 onion , chopped
1cup shredded cheddar cheese
4 eggs
1 cup milk
1/2 teaspoon salt
1/2 teaspoon pepper

Direction:
1.Preheat oven 350*
2. bring pot water to boil and cook potatoes til tender, firm.about 15 minutes;drain.cook brocolli til tender but firm about 5 minutes. drain.
3. Mash potatoes with milk and salt,brush a deep dish pie plate with olive oil and press potatoes in, brush with remaining olive oil.Bake in preheated oven for 30 minutes or until lightly brown
4.arrange broccoli, onions, & cheese in the potato crust.whisk together the eggs, milk, salt and pepper, pour over broccoli and cheese.
5.Bake in oven for 30 -40 minutes, until slightly puffed and cooke thru. allow to cool for 10 minutes before serving....ENJOY!

Ingredients:
veggies of your choice,mine was eggplant, onion, mushroom, and peppers... sauteed til brown in a little olive oil
1 boneless ,skinless chicken breast, pan seared
dash oregano, salt pepper and garlic powder
1Cup pizza sauce
shredded parmesan cheese

Directions.
sautee veggies in olive oil til brown
pan sear chicken breast in a little olive oil
Pour some sauce in bottom of a small casserole dish, then add the chicken and veggies then pour rest of sauce then top with the cheese and bake in oven til bubbly...ENJOY!




Refried bean and chicken and veggie tostadas

Refried bean and chicken and veggie tostadas
Ingredients:
1can pinto beans
onion, sliced
bell pepper sliced
cup mushrooms, sliced
1 boneless, skinless chicken breast
2 pitas,(i use Jospeh's flax and whole wheat pitas 6 inches...60 calories each)
cumin , salt and pepper
fat free cheese of your choice

sautee veggies ,chicken in olive oil cook til everything is brownedI also used on Jalapeno chopped for spice)put the cumin and salt and pepper in...I go by taste with cumin ... i love it so i use more...
rinse& drain pinto beans and pour into seperate pan, turn on heat and get a potato masher and mash as they cook , then add some cumin to taste and cook til they look like refried beans (about 5 minutes) stirring often.....
put some of the refried beans on a pita then some chicken veggie mixture and top with cheese and put in oven til cheese melts.... ENJOY!

Ingredients
Nonstick cooking spray
1½ cups canned black beans, rinsed and drained
½ cup unsweetened cocoa powder
¾ cup egg substitute
2 tablespoons low-calorie sugar-free chocolate syrup,
2 tablespoons reduced-fat sour cream
1 tablespoon unsalted butter, melted
24 packets (84 g) Truvia or 8 tablespoons granulated Splenda
1 teaspoon vanilla extract

Cooking Directions

Preheat the oven to 350°F. Spray an 8×8-inch glass baking dish with cooking spray.
Combine the beans, cocoa powder, espresso powder, and egg substitute in the bowl of a food processor. Process until the mixture is smooth, about 2 minutes, scraping down the bowl halfway through.
Add the chocolate syrup, sour cream, butter, Truvia, and vanilla. Process until all of the ingredients are combined, about 1 minute.
Pour the batter into the prepared baking dish, and smooth the top with a spatula. Bake for 28 to 30 minutes, turning the dish halfway through the baking time. A toothpick inserted in the center will come out with soft batter clinging to it.
Let the brownies cool completely in the baking dish on a wire rack. Then cut into 12 squares and serve. Refrigerate any leftovers.AND ONLY 53 CALORIES each Brownie...Enjoy

poker and food

Made sliders for a poker game last night , they went over very well , crab cake sliders and hamburger, plus made deviled eggs....I love these games always trying to come up with something new to make and take....
